What I Ate This week!

Yay! It is Saturday today which means I get to sit back and relax tonight and then I get to chill out all day tomorrow :) ahhh the joys of days off! 


This week has been a busy one for me. One of my New Years resolutions this year is to socialise more and I have spent the last two weeks making sure that this resolution can come true! I have been out for dinner, taken my hubby and son to see Goosebumps at the Moonlight outdoor cinema, visited friends and just been out the house enjoying the world. 

I am so much happier from spending quality time with others and I am really looking forward to making the effort this year to be more active, more adventurous, more social and just living life in general. 

This week has also been amazing for all things food food food. I am still keeping to my resolutions and being mostly plant based with my diet. The dairy part of my diet has been the hardest part to get used to but I am feeling so much better inside and out. Finding so many new vegan recipes has been so much fun. Real food just tastes SO good. 

Here are a few of the things I have been eating this week. 


Vegan Chilli Nachos topped with Vegan cheese
Banana and Peanut Butter on toast with a small bowl of fresh papaya
My homemade muesli topped with banana and honey
Tuna pasta salad
Peanut butter on toast, bowl of fresh berries and a chai tea with almond milk
And my favourite........Chickpea smash on Soy and Linseed toast! 

I am hoping to keep incorporating much more fresh fruit into my diet over the coming weeks and more green smoothies to get some more of the nutrients I need to keep healthy. I am also hoping to make. U self some more time to get fitter by exerCising in some form every day.
